So I've been attempting for the past couple of years to eat a lot less meat, and I've been largely successful. Right now I would call myself a flexitarian. I definitely eat eggs everyday, and don't intend to give them up. also, if there's pepperoni on pizza or something I'm not going to refuse to eat it. However for many other things like my wraps, and in this case tacos, it's relatively easy to substitute chickpeas, beans, or tofu for times I would normally use meat.
The trick with tofu, has been trying to get the right texture. Tonight I cut it thin, sprinkled it with taco seasoning, then baked it for about 20 minutes. I'm looking forward to eating the tacos. 😊
