I Need To Get More Adventurous With My Cooking

I got this spice rack in December of 2019. It was supposed to be my white elephant gift for the exchange at work, but I ended up keeping it for myself instead. It just occurred to me more than a week later though that probably 3/4 of the jars of spice have never even been opened. I like to cook, but I tend to keep things in a fairly narrow range of dishes that I'm comfortable with. I do have a couple of cookbooks, and an entire folder in my Google bookmarks of different recipes. Perhaps I should make an effort to try some new ones a bit more often. #project365 day 15

How To Buy Bananas

I like to eat my bananas when they're fairly ripe, so it's always been a bit of a challenge making sure that I always have some handy at the house. Most of the time the stores get rid of them before they even turn yellow. Lately I've gotten a lot better about developing a strategy. Instead of buying a huge bunch, I just get three or four at a time. Then when my current batch is starting to become yellow, I grab another bunch of three or four green ones for the second half of the week. not sure how long I'll be able to continue this, but at least for these two weeks it's been working out pretty well. #project365 day 14

Overnight Is My Favorite Shift

... especially when there's no weather I've always had an easier time staying up all night than waking up too early in the morning. As such, the mid shift is always the one that I enjoy most. When there's no weather, it's even better, as it means the first couple of hours of my shift will be spent catching up on movies or TV shows. And the best part is, I'm not even "goofing off at work" when I'm doing this. I just need to be there all night in case something unexpected happens. But for the most part the work during that shift all happens right at the end of the night. #project365 day 13

My San Antonio Backyard

I've rented a room in this house down here in San Antonio for a little over 2 years now. Although I don't sit out there nearly as often as I should, one of my favorite things about this house is the nice backyard. those bird baths are particularly cool, has there been a few times I've sat on the back porch with my camera and taking a bunch of pictures without even having to get in the car, or even walk to a different location. Unfortunately as I type this it's about 45° outside, so I only popped out to take the picture and then came right back inside where it's a bit warmer.  #project365 day 12

Tofu Tacos

So I've been attempting for the past couple of years to eat a lot less meat, and I've been largely successful. Right now I would call myself a flexitarian. I definitely eat eggs everyday, and don't intend to give them up. also, if there's pepperoni on pizza or something I'm not going to refuse to eat it. However for many other things like my wraps, and in this case tacos, it's relatively easy to substitute chickpeas, beans, or tofu for times I would normally use meat. The trick with tofu, has been trying to get the right texture. Tonight I cut it thin, sprinkled it with taco seasoning, then baked it for about 20 minutes. I'm looking forward to eating the tacos. 😊 #project365 day 11

Snow in San Antonio

They got several inches of snow that actually stuck to the ground up at the girl's house in Copperas Cove. It was a little more surprising though when I went outside here in San Antonio and there was even a little bit of snow falling. It won't stick, so I'll have no issues driving into work later tonight. But still unusual enough that I figured it qualified as the subject of today's blog post. #project365 day 10 p.s. this is what it looked like up in Copperas Cove this morning (my daughter Joey sent me the picture via text):

Wintery Gloom

I decided to stay in San Antonio this weekend since I start night shifts at midnight on Sunday night. However, it's about 50° and pretty gloomy outside right now, so my day consists of pretty much sitting on the recliner in the living room reading a book. I think there might be some wood outside in the backyard, but I'm not sure I'm quite brave enough to start a fire. The last time I had a fireplace was back in early 2000 when I lived in St Louis. One evening I decided to take advantage of the fact that I had a fire place. Only problem is, I forgot to open the flu thing, and within about 20 minutes my entire apartment was filled with smoke. So you can probably imagine my hesitancy now. #project365 day 9

Costco Hot Dogs

One of the worst habits I'd let myself get into over the past 6 months or so was to always stop for one of those $1.50 hot dogs every time I did a Costco run. Yesterday I was good and just headed straight for the door. #project365 Day 8

Joe Biden's last hurdle

Today I actually took a picture of the screen on my tablet to capture the time when Joe Biden went over 270 electoral votes as the certificates were read by Congress. 3:32 a.m. eastern time on January 7th 2021. #project365 day 7

I Miss The Gym

I'm hoping that I'm able to get the covid vaccine sometime in the next month or so. After that, I might be comfortable going back to the gym. I was doing so good right up until the pandemic, going two to three times a week for a hard hour long workout. Since then I've been trying to keep up with things using resistance bands and beach body videos at home, but if I'm honest I've fallen off a bit. Time to start rebuilding the habit. #project365 day 6

I Hate Online Poker

It's hard to describe how passionately I hate online poker. Yet I continue to torture myself with it nearly every day. There are many things I've missed during the pandemic, but live poker is near the top of the list. #project365 day 5

Two weeks after Christmas

French toast for breakfast
